Green Peas Risotto

Risotto is a very tasty way of cooking rice. It is an Italian traditional dish, cooked with broth and flavored with Parmesan cheese and other ingredients which can include meat, fish or vegetable.

The recipe I’m posting today is with green peas, very healthy and low fat. Hope you guys will like it! :)

Ingredients (for 4 servings)

  • 2 cups rice
  • 2 cups green peas
  • 1/3 cup onion (chopped)
  • 4-5 leaves basil and mint
  • 1/4 cup grated Parmesan cheese
  • 2 cup vegetable broth

In a skillet heat some oil and cook the onion till soft

Add the green peas, one dipper of vegetable broth and salt. Cover and let cook for about 15 min.

Now add the rice, slowly add more broth. Each time add one dipper then when it dries add one more and so on till the rice is cooked. About 15-20 min.

Remove from heat, add basil and mint (minced) and some grated Parmesan.

Serve warm on  plate.
