Stracchino and Ham Quiche

This recipe is a little invention of mine. I bought 3 packages of Stracchino cheese from Bottega, with the help of the nice and friendly Giusi of ViviShanghai, and I was looking at a way to use it in a more original way. So I thought that a quiche could have been a perfect solution!

I don’t think any of the grocery stores in Shanghai sell stracchino cheese, so if you need it you can contact Giusi to giusy@vivishanghai.com (in English or Italian).

Ingredients (for about 12 servings):

Chop the onion

In a skillet heat some butter with 1/2 cup water and cook the onion till soft.

Let it cool down, then add the stracchino cheese and milk.

Add the beaten eggs, salt and pepper.

Roll out the Pâte Brisée (shortcrust pastry) and place it in a greased cake tin.

Pour in the egg and stracchino filling, fold the borders.

Bake for about 40 min in pre-heat oven at about 180 C (375 F).
